A Healthy On The Go Chicken and Vegetable Stir-Fry

Ingredients:

  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 1 teaspoon cornstarch
  • Salt and pepper
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup sliced mushrooms
  • 2 cups broccoli florets
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil

Instructions:

  1. In a medium bowl, mix together the chicken, cornstarch, a pinch of salt, and a pinch of pepper.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the garlic, bell peppers, onion, mushrooms, and broccoli to the skillet. Stir-fry for about 5 minutes, or until the vegetables are tender but still crisp. Remove the vegetables from the skillet and set aside.
  3. Add the chicken to the skillet and stir-fry for about 3 minutes, or until fully cooked.
  4. In a small bowl, mix together the soy sauce, honey, and sesame oil.
  5. Add the vegetables back to the skillet with the chicken and pour the soy sauce mixture over the top. Stir-fry for an additional 1-2 minutes, or until everything is well-coated and heated through.
