A Healthy On The Go Chicken and Vegetable Stir-Fry

Chicken is a staple ingredient in many healthy recipes because it's low in fat and high in protein. It's also versatile, making it easy to include in a variety of dishes. In this blog post, we'll share a healthy and easy-to-prepare recipe that's perfect for busy lifestyles: Chicken and Vegetable Stir-Fry.

  • 1 pound boneless, skinless chicken breast, cut into thin strips
  • 1 teaspoon cornstarch
  • Salt and pepper
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup sliced mushrooms
  • 2 cups broccoli florets
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil

  1. In a medium bowl, mix together the chicken, cornstarch, a pinch of salt, and a pinch of pepper.
  2. Heat the olive oil in a large skillet or wok over medium-high heat. Add the garlic, bell peppers, onion, mushrooms, and broccoli to the skillet. Stir-fry for about 5 minutes, or until the vegetables are tender but still crisp. Remove the vegetables from the skillet and set aside.
  3. Add the chicken to the skillet and stir-fry for about 3 minutes, or until fully cooked.
  4. In a small bowl, mix together the soy sauce, honey, and sesame oil.
  5. Add the vegetables back to the skillet with the chicken and pour the soy sauce mixture over the top. Stir-fry for an additional 1-2 minutes, or until everything is well-coated and heated through.

This recipe is perfect for busy lifestyles because it's quick and easy to prepare. It only takes about 15 minutes to make, and you can use whatever vegetables you have on hand. The chicken is flavorful and tender, and the soy sauce, honey, and sesame oil add a delicious, savory flavor to the dish. You can serve it with rice, noodles or quinoa for a more complete meal. This dish is great for meal prep, you can make it ahead of time and store it in the fridge for up to 3 days, reheating it as you need it.
